Mòr is the Scottish Gaelic word for big or great, and that’s exactly what these fish are. The Atlantic Coast of Scotland has some of the most powerful currents in the world, and is an exceptional habitat for producing athletic, muscular steelhead.

Mòr Scottish Steelhead are exceptional for their size, strength, and quality.
Steelhead Trout (Oncorhynchus mykiss), also called sea trout or loch trout, are rainbow trout that migrate to the sea. Like all rainbow trout, they are native to the Pacific coastline of North America but are now found all over the world.
In the sea, the steelhead grow far bigger, leaner and more athletic than river trout. The end product is similar to salmon, but with a sweet, delicate flavor and firm texture.
Mòr Scottish Steelhead are fed a custom, well-balanced diet for optimum fish quality and health. The feed is free of GMO ingredients and contains fishmeal from fish trimmings to minimize the impact on wild fisheries.
For the sake of local wild fish populations, all Mòr Steelhead are sterile (triploids), meaning that they won’t mature and can’t mate with wild fish and influence wild fish genetics.
the farm
The Cannon family has raised steelhead on Scotland’s Atlantic Coast for over 50 years. All fish are grown from their own broodstock, naturally selected for their ability to thrive in sea water. This guarantees egg-to-plate control, high survival, and consistency of quality.
Farming practices are designed to mimic nature — an environment similar to a natural silty riverbed in their early months in the spring-fed hatchery, moving them to freshwater hill lochs to acclimatize to the elements, then their final journey to the sea. There, the Inner Hebrides protect them from harsher ocean swell, but the currents racing through the Cuan Sound and the Corryvreckan — the third largest whirlpool in the world — are extreme, and the fish quickly become real athletes.
The family has pioneered farming in their local waters and holds deep-rooted partnerships with local community regeneration projects and wild fisheries trusts.
In the Kitchen
Mòr Scottish Steelhead have a notably clean taste. They’re firm in texture and have a naturally sweet, buttery, and delicate flavor. Suitable for raw and cooked application, the fish also take well to smoke without becoming oily.
